Smoothie - one banana, 5 frozen strawberries, cocoa powder, chia seeds, a heaping spoonful of peanut butter, a handful of baby kale, and almond milk. Super thick and tastes like chocolate pudding!

I typically eat a small bowl of granola with fruit every morning but with my new work schedule I've decided to experiment with heartier breakfasts... this morning I had leftovers from a weekend brunch: corncakes topped with applesauce & walnuts, with a side of maple-roasted sweet potatoes and sauteed kale with mushrooms. Very filling! Tomorrow I might make a tofu scramble with red peppers and kale, and more sweet potatoes since I have still have some left. I'll be keeping a close eye on this thread for more ideas.

I've been a granola fiend lately. Breakfast is a big bowl of homemade granola with coconut and pecans and walnuts, topped with a bunch of raspberries and blueberries. Oh, and a gallon of black coffee.

I had to find this thread and bump it because I'm actually having a decent breakfast for once! A slightly odd mixture of delicious things.... blackeyed bean seitan sausage, kalamata batard with olive hummus, a handful of green beans (raw), and a big mug of oolong tea with soy milk.

Nothing too exciting but I feel satisfied: Gardein breakfast sandwich sans cheeze (it. . .didn't melt??), over-ripe banana, iced vanilla "latte" made with free work coffee and vanilla soy milk.

I'm happy to report that I enjoyed breakfast tacos nearly every day this week. This morning's had spiced black beans (cooked with two types of chiles and garlic), queso and smokey soy curls (in place of the roasted potatoes/squash mix I had earlier this week).
