So, I was looking around on Herbivore Clothing when I came across the Praise Seitan tshirt. At the bottom it said to google search "Seitan O'Greatness" and thank them later... So I did... And I found some comment about a gyro variation recipe posted on "PPK page 11" mentioned on another thread... Any chance anyone still has this recipe and would be interested in sharing? Falafel is good, but MAN I miss gyros sometimes...

You mean this one? I don't remember where I found it though, it might have been on a blog.


Greek Gyro Style Seitan O'Greatness

Dry ingredients:
3/4 cups vital wheat gluten
1/8 cup nutritional yeast
1/4 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1/4 tsp black pepper
1/4 tsp cayenne pepper

Wet ingredients:
1/3 cup water
2 tablespoons lemon juice
1 tbsp soy sauce
1 tbsp finely minced mint
1 heaping tablespoon tahini

Preheat oven to 325°.

In a large mixing bowl mix dry ingredients.  Mix the rest of the ingredients (liquid ingredients) in a smaller mixing bowl.  Whisk well until mixed.

Add the liquid ingredients to the dry ingredients.  Mix well, then knead for a minute or two.. it doesn't need long.

Form into a log (6-8" long), wrap tightly in foil, twisting ends.  Bake for 90 minutes.  When done baking, unwrap and leave out to cool all the way.  Then wrap it foil or plastic and refrigerate.  Slice to use as desired.

The gyro recipe is a variation. It's referring to Lachesis' Seitan o Greatness. Here's what I think is the original recipe that a kind soul (Appifanie?) had posted on SparkPeople.

Ingredients

Ingredients:
1.5 cups vital wheat gluten
1/4 cup nutritional yeast

2 tsp paprika
1/4 tsp cinnamon
1/4 tsp cumin
1-2 tsp pepper (I use 2 tsp)
1/4 tsp cayenne pepper (you can use 1/8 tsp if you like it less spicy)
1/8 tsp allspice
2 tsp garlic powder


3/4 cups water
4 tbsp tomato paste
1 tbsp tamari
2 tbsp extra virgin olive oil
2 tbsp vegetarian Worcestershire sauce



Directions

there was a million page thread about the seitan o' greatness on the old boards. many many people tried it and loved it! i can only imagine the gyro style one would be good, too! i make gyros by marinating regular seitan in lots of garlic, olive oil, lemon juice and oregano and serving in pitas with terry's cashew tzatziki from vcon. so so good.

Mmmmm this is all very exciting... I didn't even know the sauce was in the V'con. Haha! So much lovely stuff in there.

I made this today and reduced the pepper, since I don't much like pepper. OMG so good! Trying not to eat it all hot out of the oven...

I don't use those, but I can't find the one I use online. Most recipes are kind of the same, but mine also uses 2tbsp of peanutbutter in it.

What I also do is to replace part of the paprika powder by a half a real bell-pepper that I purée with the other liquid ingredients.

The other half of the bell-pepper is then cut into small pieces that I mix with the dry ingredients just before I add the wet mix.

I have no idea what a gyro is but I have tried the original Seitan O'Greatness and it was one of my favourite things ever.
