Inspired by the many many threads about scrambles, here is a thread to post recipes! I figure it will be a good reference, instead of looking through multiple threads.

I will go first. I don’t write recipes, so forgive me if it is difficult to read.

Mediterranean Scramble.
This recipe is heavy on the veggies, and I use little or no oil to cut down on the fat. Amounts of veggies and tofu can be easily adjusted depending on what you have and how big you want the scramble. Go heavier on the herbs and spices if you have a lot of tofu and veggies.
2 servings (or one giant serving)

Oil or spray for cooking
1/4 c onion, chopped
1-2 cloves garlic, sliced
1/4 c red, yellow or orange bell pepper chopped
3-4 crimini mushrooms, chopped
1/3-1/2 block of super firm tofu (pressed if necessary to get water out-I use TJ brand, not pressing necessary)
1/4 c zucchini, chopped
2 Tbs sun dried tomato in oil, drained
3-4 Kalamata olives, sliced
1/2 c tomato, chopped
1-2 handfuls fresh spinach, chopped
Juice from half a lemon
1/4 c cooked garbanzo beans *optional
1/4 c cooked diced red potatoes *optional
3-4 basil leaves, torn *optional
2 Tbs nutritional yeast

Spices (pre-mix spices in a small container):
1/2 tsp turmeric
1/2-1 tsp dried oregano
1/2-1 tsp dried basil
1/4 tsp salt


Heat a non-stick pan over medium-high heat with cooking spray or small amount of oil. Sauté onion for a minute or two, then add garlic, peppers, mushroom and zucchini. Cook for 4-5 minutes until soft and mushrooms give off a bit of liquid. I like my veggies to be a bit browned. Add sun dried tomatoes and stir to incorporate.

Add all spices and stir briskly for 30 seconds. Add a splash of water if mixture is too dry.

Add the tofu, crumbling into the pan. Try to make larger size crumbles if possible. This is best if you have super firm tofu with no liquid.

Cook over med-high heat for 5-7 minutes, adding splashes of water so the tofu can better absorb the spices. Close to the end of cooking time, stop adding water to allow the tofu to brown against the pan. **a minute into cooking time, add the garbanzos or potatoes if using**

Add chopped tomato and olives, cook for about a minute until the tomatoes break down a little.

Add nutritional yeast, stir, then squeeze lemon in directly into the pan. If you mixture is not absorbing the yeast, add a splash of water.

Add the chopped spinach, and basil if using. Stir until wilted, adding water if necessary.

Serve! This is really good with a side of red breakfast potatoes, cooked with similar herbs.

Mmm...I love tofu scrambles! Your recipe sounds great!

Lately my tofu scrambles have a Mexican theme. Here is my recipe:

Olive Oil
1 block of firm tofu
1 onion, chopped
1 tomato, diced
2 garlic cloves, crushed
3 cups black beans
2 green peppers, diced
hot sauce, to taste
chili powder, to taste
ground cumin, to taste
curry powder, for color
salt, to taste
pepper, to taste

In a skillet, mash up the tofu with a potato masher, sprinkle some olive oil and curry powder over the tofu, and saute until it starts to brown.

In another skillet, saute 1 tablespoon olive oil, onion, garlic, and green peppers until they begin to brown. Add the tomatoes, black beans, and spices.

Add the tofu to the vegetables and mix thoroughly.

Finally add the hot sauce and let cook on medium-low for a few minutes.

Serve and enjoy!

Mine is basically veggies cooked in oil, crumbled tofu, crumbled vegan sausage, tamari, vegan worcestershire sauce, pepper, and garlic powder. And lots of Daiya cheddar shreds added in until melty and gooey!

Serve with toast or a gf english muffin with EB on it.

Mines super straightforward.

1 pkg extra firm water pack tofu
1/4 c nooch
1 tbsp garlic powder
1 tsp onion powder
1/2 tsp salt
1 1/2 tsp black pepper

Combine in bowl with fork to finely crumble tofu
Heat 2 tsp oil in nonstick skillet
Add seasoned tofu
Cook until browned to taste


I use other recipes but this is my go to "I want scrambled eggs" version.

Another recipe I really like is the Skinny bisque French Scramble (I'm not a fan of the books but I love the recipe), which is basically sautéed spinach and mushrooms with scallions, add tofu, garlic, pepper, salt, nooch, and a bit of daiya if desired.

Ditto. It is still the basis for all my scrambles.

I really don't have much to contribute. Other than VWAV scramble in a wrap w/ spinach, avocado and fresh salsa. Dig it.

Easy Salsa Scramble

1/4 cup chunky salsa (not watery)
1 package of extra firm tofu drained & pressed
pinch of fresh black pepper
a pinch of turmeric for color
a overflowing teaspoon of n. yeast

Oil the pain and break the tofu up and place all ingredients in the pain on medium for about 10 minutes - tossing every few minutes or so.

I have been making this for dinner on lazy Sunday night and eating with buttery toast.

Here is the one I have been making for the last few weekends. I will actually write it out since A) I need a break from writing these articles at work and B) I think the order of ingredients makes a big difference in the way the scramble comes out.

I like to use these for breakfast tacos. I go for a cheesy kind of texture. I guess you could get 3 or 4 tacos out of this recipe. Sometimes I add black beans. Always serve with avacado and sour cream (if I have them). It's based off of the VWAV recipe

Cheesy Scramble
Makes one BIG scramble (or 2 small ones)

Cooking Spray
1/3 block of tofu (firm, super firm, or extra firm)
1/4 c diced onion
1/3-1/2 cup small diced veggies (I like mushrooms + red bell peppers)

Spices (mix first in small bowl to add at once)
1/2 tsp tumeric
1/2 tsp paprika
1/2 tsp garlic salt
1/2 tsp dried thyme
1 tsp cumin

1 ripe tomato, chopped OR 1/4 cup salsa
2 Tbsp Nutritional yeast
Juice of half a lemon

1-2 tsp Hot sauce (I like Tapito)
1-2 Tbsp Optional Cheeze Shreds (I like Dayia Pepperjack)
Cilantro

Heat a non-stick pan with cooking spray on med-high to high heat. Add the onion and veggies. Cook until soft and mushrooms give off liquid. Add the spice mixture and stir to coat veggies. Add a splash of water if needed.

Crumble the tofu into the pan. I keep it on the small side for this scramble. Stir to combine, and cook for about 5 minutes over med-high to high heat. Keep adding splashes of water to ensure that the tofu picks up the spice flavors. Add tomatoes/salsa and cook until the tomatoes have broken down.

Add nutritional yeast, and a good splash of water to make it all a bit mushy/cheesy looking. cook for a minute, then squeeze in lemon juice, add hot sauce (to taste) and finally add the optional cheeze. Stir until the cheeze is melted. If not using cheeze, cook a bit longer with additional nooch/water/lemon juice as needed to give it a cheesy texture. Sprinkle on cilantro!
