Ohhhhhhh,I loves me some carrot desserts! I just baked the carrot cookies from the vegan cookies invade cookbook and applied a and applied a technique that help helps them retain their chewy-goodness texture. If you put the carrot shreds in a small strainer with a tablespoon of sugar and let them macerate while you prepare the other ingredients then press their liquid out before adding them to the batter, it reduces the moisture and allows the cookies to retain their excellent texture for up to 3 days.
