 Post subject: what would you do with 5 large dill pickles?

i've had a gigantic deli-sized jar in my fridge for months! it needs to go now. do you have any very pickle-heavy meals?

i was thinking of making a tuna salad, but i doubt that'd tackle even one of the pickles. i suppose i should just eat one for lunch each day until it's gone.

You could make a relish or a chutney and serve it with veggie burgers/dogs. I would probably just put them in sandwiches.

Make sure you reuse that pickle juice! It sounds weird, but potatoes boiled in pickle juice are amazing. Or you can toss some cloves of garlic or really any veggie (we usually do chilis or garlic) into the jar and wait for the deliciousness. I've been so crazy as to do oyster mushrooms and shallots.

I particularly love dill pickles thinly sliced in a freshly toasted pita bread. Can just be with some spread, or with some chopped tomatoes as well. I know that's not exactly a recipe, but it's my favourite way to eat them.

Fried pickles!! Tami has a recipe for them in American Vegan Kitchen and in the "Jimwich" in Vegan Sandwiches Save the Day. They are weird but yummy (if you like pickles)!

yeah, seriously, I would batter and fry them (I've had them cornmeal-battered and beer battered) in small circular slices and serve with vegan ranch!

I would make Mama Mayhem's Tofu Extraveganza (from, I think, La Dolce Vegan) with two of them. Then put that on toast for lunch. I can PM you the recipe if you don't have the book.

haha! i'm more of an olive girl. (also, we had been passing them over for the pre-sliced vlasic pickles that aren't in gigantic jars. unwise, i know. now the deli pickles taste kinda stale. but we're going to power through them. 1.5 down 3.5 to go.)

the pickles have been tackled. yay!

i ended up making the fried pickles and put them on BBQ soy curl sammies. (the frying actually helped mask the staleness, so that was good. they were awesome! (but i might have added too much soymilk, cause the batter was slightly too runny, so next time i will measure more accurately. but they were delicious either way!)

i have a lot of those vlasic pickles in the basement (it was a good deal and i also overestimated our consumption) so i will definitely make the mama's tofu stuff.

thanks again everyone! <3 now i have more room in my fridge. yay!
