My body just told me that it's been too long since I had breakfast burritos, so I thought I'd make some tomorrow. But I can't decide what to put in them. What do you put in your breakfast burritos? Any recipes you can recommend?

I think roasted potatoes are pretty much a must. I'll even use the pre-packaged frozen ones some times as I am lazy. I don't even think tofu scramble is necessary. Perhaps some mushrooms, fresh salsa and spinach and you're good to go. And Field Roast apple sage sausages are a great breakfast-ish sausage.

Ha! I make breakfast burritos out of left-overs, ginned up with a little extra greens, beans or tofu and a lot of hot sauce.

There is no limit to what you can burrito!

Just had one that was sweet potato, quinoa, tofu, left-over green beans and zucchini and peppers with a shake of nootch and a shake of Cholula. Baby had the same, just sans Cholula and loved it.

My favorite breakfast burritos are a mix of onion, garlic, Trader Joe's soy chorizo, potato and sweet potato chunks, and cheesy sauce (I use ctate's). Sometimes I add whatever veggies are in the house, but I really like it best with just the above and fruit on the side.

My favorite ever used to be white rice, a bit of cheese and (yuck) scrambled eggs and salsa. I think it may be good with the rice and a tofu scramble, plus vegan cheese and salsa. Now I really want one, carb overload be damned..!

"Traditional" tofu scramble, sausage, and roasted potatoes, topped with any combination of salsa, guac, hot sauce, sour cream, and/or vegan gravy.

this may not sound like breakfast food, but leftover re-fried beans, salsa, avocado and/or vegan cheese is delicious! awesome hangover food.

i also have this vision of a tempeh sausage crumbles/scrambled tofu w/ veggies & vegan cheese burrito that i'm sure would be delicious if i ever get down to making all those ingredients at one time.

Saturdays are awesome at work because they mean vegan breakfast burritos. Ours have curry scrambled tofu, black bean salad (basically a black bean salsa with corn), and daiya cheddar. They are so simple and I'm sure I could make awesome ones at home but these are so good. It must be the noochy/curry scramble.

Two most common burrito fillings in my kitchen (avocados will be used if I have them, unfortunately I rarely do):
sweet potato - black bean (plus cumin etc)
salsa scrambled tofu - refried beans (aka veganised huevos rancheros)
Both of these are originally via Sarah Kramer books (LDV and GoV I think) but I don't necessarily use the recipes.

I like my burritos kind of lighter (so I can eat more), so I would do pico de gallo, avocado slices, some sauteed or roasted veggies such as corn, greens, mushrooms, onions and garlic, and some refried black beans. With hot sauce, of course.

I filled the burritos with scramble, potatoes, avocado, tomatoes, cilantro, mushrooms, bell pepper, onion + garlic, TVP chorizo and nectarine salsa. Some refried beans and cheese in there and it would have been perfect. Will have to make some more soon!

My favorite combo is tempeh bacon or crumbled sausage, tofu scramble, jalapenos, roasted potatoes, and hot sauce. Sometimes refried or black beans.

FYI - AFR Goddess dressing makes a delicious sauce for breakfast burritos. I made some the other day with that, scramble, and vegan cheese. Simple and amazing.
