 Post subject: best tomato soup recipe?

looking for a great tried & true recipe for classic tomato soup. one that yields a small batch (4 servings or so). would prefer to be able to used canned tomatoes.

nothing fusion or fancy, just a simple tomato soup recipe. i couldn't imagine nuts being in tomato soup, unless maybe you put cashew creme on top as garnish, but due to allergies, i need a peanut/treenut free recipe.

recipe suggestions from cookbooks and/or online links would be much appreciated!

The absolute best tomato soup I have ever had was the one from Chloe's Kitchen. It's so simple and easy to make and tastes AMAZING! It does call for fresh tomatoes but you could maybe sub canned (I haven't tried). The secret is roasting all the veggies first. Just thinking about it makes me crave a bowl. To bad tomato season is over here, might have to try with canned myself one day :(

I was going to suggest the Chloe's Kitchen one, too. I've made it with canned tomatoes probably more than with fresh and it turns out great.

My favorite is the Old Fashioned Tomato Soup from Vegan Diner. I use garlic powder or dried shallots depending on what I have instead of the garlic cloves. I seldom have fresh garlic.

The one in Vegan Diner is really good, but it uses cashews.

yeah i have a nut allergy as i mentioned above so i can't use the vegan diner recipe

I forgot to mention that I often use sunflower seeds or a heaping teaspoon of tahini in place of the cashews in the Vegan Diner recipe.

Ingredients
36 ounces crushed tomatoes
12 ounces canned coconut milk
2 teaspoons minced garlic
2 teaspoons minced fresh ginger
2 teaspoons tamari
1 teaspoon crushed red pepper flakes
1 teaspoon dried basil

Preparation
Combine everything and whisk well.
Heat to serve.

(I use the soup setting on my blendtec to heat up without using a pot ;) You could also use an immersion blender. I have never tried unblended).

Ooh, I still have yet to make the chloe's kitchen one! I love love love the tomato/rice/navy bean soup in veganomicon. It makes a HUGE amount, but I'm sure could be halved very easily. It's made with all pantry staples, no nuts (that I can think of). That one is good when you want tomato soup as a hearty meal - not just as a bowl to go on the side with a sandwich. Although I've had it that way as well!
