ive been making the carmel pecan bars for the markets for my vegan stall. actually they have morphed into cashew carmel bars cos pecans are usually sold out at the shop lol. im not thrilled with the mouthfeel that the cornstarch gives the carmel though...sort of...starchy lol. reminds me of those individualy wrapped bullseye carmels with the starchy sweet white center we used to get (nonvegan). just wondering if there might be something to replace cornstarch that wont give the slightly starchy mouthfeel?

I always use arrowroot in place of cornstarch, no matter what. I've never had it fail me! (that said, my apologies if it fails you) You could also try tapioca starch!

I often use potato starch in place of cornstarch as it is much much cheaper here. You have to really whisk carefully but I think the results are good.

try any different starches!! i find sometimes cornstarch leaves a taste/feel i don't like. i use arrowroot a lot on the probably mistaken assumption that it has some nutritional value, and am usually really satisfied with it.
