I've just recently started nursing clinicals and have the pm shift and have a sitter with my kids during dinner. There is already so much going on for them (homework, bedtime, baths) I'd like to have something easy for them to make the kids (and themselves) for dinner. Thinking some make-ahead stuff, some frozen from the store stuff, anything really. My mind is blanking because I know what I consider easy might be more than someone else could handle with my three monkeys.

I make a big pan of cheezy sauce from veganomicon with added margarine and salt for my kiddo. It reheats so well.

CROCK POT!
i don't know any specific meals, but my mom always used to leave stuff in the crock pot on tuesdays when she worked late and then we'd always have a delicious, home made, piping hot dinner ready for us.

we make big batches of lentil burgers and freeze them, all you have to do is pull them out and have stuff for toppings. maybe leave a pasta salad or some kind of side too.

I don't see anything wrong with PB&J for dinner!
But yeah, soups and chili are easy to make ahead and defrost on the stove or in the microwave. You could always make and freeze pizza too.

Chili and soup can be made in the crock pot, which I think is a great idea. A large batch of cornbread or homemade bread can go with either dinner as well.
Good luck with the clinicals! My husband is finishing up his last clinical mid October and then he is DONE!!!
