 Post subject: Agar – How do you replace eggs with it?

I’ve been wanting to veganize my nan’s butter tart recipe and from reading things online, my best bet it to use agar. I only need to replace one egg but I’m not sure how to go about doing it. How much should I use? Do I need to mix it with extra liquid? Do I need to heat it? Would it be better to use both agar and arrowroot? If you have any understanding of how this stuff works I’d really appreciate your feedback. Thanks.

Can you post the recipe? I'm not sure why you think replacing one egg would require agar.

I don't have it with me right now, I'll post when I get home but I'd also like to know for future reference.
I’ve read some reviews of other recipes where cornstarch was used and they weren’t very positive. If I could make it work with this recipe then I’d like to start experimenting with veganizing some pie recipes.

I haven't used agar, but I used a cornstarch recipe a few years ago and it wasn't very good. I LOVE butter tarts and I will be very stoked if you figure out the mystery of the vegan butter tart.

I wonder if substituting a 1/4 cup of silken tofu for the egg would work? Maybe blend the tofu with the corn syrup, melted vegan margarine, and perhaps a tablespoon of cornstarch until smooth and then stir in the brown sugar and raisins. That might work okay.
