last night was taco salad - greens, seasoned cauliflower & walnut "meat", salsa, olives (the ones stuffed with jalapeños - i could eat the whole jar), diced onions, red peppers & cucumber, avocado slices, some macadamia cheese, and the obligatory splash of... wait for it... MCT oil to bring it all together, of course!

Since November I've been doing approximately 20% veg/20% protein/60% fat six days a week and attempt to stay at or under 50g of carbs per day to maintain ketosis. Then "re-feed" with one day of 80% carbs from white rice and/or sweet potato to intentionally break ketosis.

I hit my goal weight last Sunday and started a daily workout routine Monday morning. I have noticed I get really tired around 3 o'clock now, so I think I may need to up the carbs a bit to fuel the workouts.

I've got soybeans soaking... gonna pull the trigger, and start beta testing Project Tofu.

thanks, Ariann - now on to the next one... I'm doing 20lbs at a time so I don't overwhelm myself. :)

I think this next 20 will likely be the last, but I'll have to get there first to know for sure.

I made low carb focaccia and pizza last week!

It's made with 1/2 cup soy flour, 1/3 cup vital wheat gluten, 1/4 cup flax meal, 1 tablespoon wheat bran, 2 tablespoons almond flour, 1 teaspoon instant yeast, 1/4 teaspoon salt, some garlic powder and herbs, 1/2 tablespoon oil and 1/2 cup of water. Make a dough, form a crust/focaccia, let the it rise four an hour in a warm spot, put toppings on and bake at 400F, 13 minutes for focaccia and 20 minutes for a pizza.

One pizza serves two people (it's very filling with all that protein) and the crust has 9 g carbs per serving. With toppings, half a pizza is about 15 g carbs.

Cornelie, thank you for posting your pizza and focaccia! I make low carb/high protein muffins, but I've been afraid to try it with a yeasted bread because I was afraid that maybe there wouldn't be enough carbs for the yeast to eat and it wouldn't rise. You have inspired me to give it a go!

Yes, yeast totally works. Even in a very low carb recipe, the yeast will still have enough carbs to munch on (would be interesting to see how much of the carb value they actually eat!), although the rise may not be very vigorous. I've read that a double rise won't work and I've never been brave enough to try, so always do a straight knead > form > rise > bake cycle.

Cornelie - I can almost smell that pizza through my screen! Gorgeous.

my dinner tonight was olive oil and herb marinated broiled tofu atop rice penne with cauliflower "alfredo" in a white bowl. it looked like a black-and-white photo! but tasty despite its bland appearance... a bit high on the carb-o-meter for my typical weekday meal at about 60ish grams, but I had a doozy of a day and needed something comforting.

This seitan recipe was a big hit in my house and came together very quickly (minus the cooking itself). I didn't make the sauce, but it was very tasty with spicy mustard.

the tofu experiment has gone very well - I've used it as a primary protein once a week for three weeks now with no quantifiable negatives, but plenty of quantifiable yumminess!

tonight's dinner will be an old fave - blackened tofu from AFR probably with a cauliflower puree and a pile of asparagus and green peas.

what have ya'll been cooking?

For tomorrow, pi day, I'm working on a modified version of the V'con Tempeh Shepherdess Pot Pie: diced red bell pepper instead of corn, 1/4 of thickening flour replaced with rice protein powder, and at least half of the mashed potato topping replaced with mashed cauliflower.

Over the weekend I'm going to make the VEW cabbage rolls with small TVP in place of the buckwheat, both to up the protein and because I hate buckwheat.

Cornelie, thanks for posting that pizza crust/focaccia recipe. I made a slightly modified version on Sunday and it was tasty and so filling - I calculated my single serve size had 36 grams of protein, so no wonder. Thanks again for sharing.

8ball, what did you use as a binder for the cauliflower base? Most recipes I come across have a million eggs, and I was wondering what to use instead.

I'm making Cornelie's foccacia - but with caraway and smoked salt. How long should I let it rise? I subbed the almond for protein powder and a little more olive oil as almond meal is somewhat expensive.

Disregard that, the recipe says one hour. I don't speak Dutch, but common sense and German and English are muddling me through. It smells good!
