I found this recipe and would like to veganize it...it has milk (Soy milk, I guess), butter (EB sticks) and 1 egg. Since it has yeast and the pumpking would give it a nice color, do I need to substitute at all, or can I leave it out?

I'm pretty sure the dough would be just fine without the egg. Just add some liquid if it seems too dry.

It's not quite the same thing, but I love these very much. I bet you could do some kind of chickpea flour/EB/non dairy milk glaze on the outside too.

Thank you! Those look great, and I can shape them the same way. Wasn't too crazy about all the sugar in the recipe I found anyway..

I almost always use 1/4 cup silken tofu to replace eggs in yeast breads.
