So maybe I'm remembering wrong, but on the old boards wasn't there some thread with a bunch of different seasoning variations for the Seitan O' Greatness recipe? Do those still exist on the web somewhere? I feel like going on a crazy gluten-baking spree and trying out some different spice combos. I just made an "Italian-style" one, but it's still in the oven so I haven't been able to taste it and determine if it's actually good or not.

Yes..there was a thai, greek and some other versions. When I would put "seitan o greatness" into my search engine, someone's blog with the variations would come up first. Now I can't find it :/

So my "Italian" seitan came out of the oven and it tastes pretty good. I'll have to play around with the ingredients a bit to get it exactly how I want it... I'd probably use a little less tomato paste next time, and something else (maybe vegetable broth?) in it's place. Not sure what yet. To my tastebuds it's not as spicy as the original recipe, but still nice and savory and tangy. Anyway, here are the ratios I used:

1-1/2 cups VWG
1/4 c nutritional yeast
2 tsp garlic powder
2 tsp onion powder
2 tsp Italian herb seasoning (I bet basil would work fine here too)
1-1/2 tsp fennel seeds
1/2 tsp black pepper
1/2 tsp crushed red pepper
1/2 tsp salt
1/4 tsp cayenne

2/3 c water
3 tbsp tomato paste
2 tbsp apple cider vinegar
2 tbsp tamari
2 tbsp oil

I think there was a stickied thread on the old board for variations on steamed sausages. I don't remember one specifically for seitan o' greatness, but there was a huge thread on that too.

The thing I miss most from the old boards is that 20 plus page thread about Seitan O'Greatness.
For some reason I copied down this Greek Gyros Style variation, which I think is form someone's blog and not the original thread, but I never copied down the original recipe. So if someone would like to post the original recipe here, I'd greatly appreciate it!

Greek Gyros Style Seitan O'Greatness

3/4 cups VWG
18 cup notch
1/4 tsp salt
1 tsp granulated garlic
1 tsp granulated onion
1 tsp oregano
1/4 tsp black pepper
1/4 tsp cayenne

1/3 cup water
2 Tbsp lemon juice
1 Tbsp soy sauce
1 Tbsp mint
1 heaping Tbsp tahini

I did some googling and found a blog post outlining some variations for half-sized logs (warning: not a vegan website). Not sure if they are the creation of the blog post author or from the original thread, but they all sound tasty.

Thai Style Seitan O'Greatness
Dry ingredients:
3/4 cups vital wheat gluten
1/8 cup nutritional yeast
1/4 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp ginger powder
1 tsp dried basil
1/4 tsp black pepper
1/4 tsp cayenne pepper
Wet ingredients:
1/3 cup water
2 tablespoons lime juice
1 tbsp soy sauce
1 tbsp finely minced cilantro
1 heaping tablespoon peanut butter


Italian Style Seitan O'Greatness
Dry ingredients:
3/4 cups vital wheat gluten
1/8 cup nutritional yeast
1/4 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1 tsp fennel seeds
1/4 tsp black pepper
1/4 tsp cayenne pepper
Wet ingredients:
1/3 cup water
1 tablespoon red wine vinegar
1 tbsp soy sauce
1 1/2 tbsp tomato paste
1 tablespoon olive oil


Greek Gyro Style Seitan O'Greatness
Dry ingredients:
3/4 cups vital wheat gluten
1/8 cup nutritional yeast
1/4 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1/4 tsp black pepper
1/4 tsp cayenne pepper
Wet ingredients:
1/3 cup water
2 tablespoons lemon juice
1 tbsp soy sauce
1 tbsp finely minced mint
1 heaping tablespoon tahini


BBQ Style Seitan O'Greatness
Dry ingredients:
3/4 cups vital wheat gluten
1/8 cup nutritional yeast
1/4 tsp salt
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp coriander
1/4 tsp black pepper
1/4 tsp cayenne pepper
Wet ingredients:
1/3 cup water
2 tablespoons smoky bbq sauce
1 tbsp soy sauce
1 tbsp Worchestershire sauce or just add more bbq sauce
1 olive or vegetable oil


If anyone has some other variations or ideas it would be cool to keep this thread going.

Question- I saw from that blog that when you cook a half-sized seitan log you only need to cook it for about 70 minutes instead of the usual 90, but I'm wondering if anyone has ever tried to make a DOUBLE sized seitan log, and if so how long they needed to cook it for? I want a SUPER-GLUTEN!
