I did some googling and found
a blog post outlining some variations for half-sized logs (warning: not a vegan website). Not sure if they are the creation of the blog post author or from the original thread, but they all sound tasty.
Thai Style Seitan O'GreatnessDry ingredients:
3/4 cups vital wheat gluten
1/8 cup nutritional yeast
1/4 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp ginger powder
1 tsp dried basil
1/4 tsp black pepper
1/4 tsp cayenne pepper
Wet ingredients:
1/3 cup water
2 tablespoons lime juice
1 tbsp soy sauce
1 tbsp finely minced cilantro
1 heaping tablespoon peanut butter
Italian Style Seitan O'GreatnessDry ingredients:

1 heaping tablespoon tahini
BBQ Style Seitan O'GreatnessDry ingredients:

1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp coriander
1/4 tsp black pepper
1/4 tsp cayenne pepper
Wet ingredients:
1/3 cup water
2 tablespoons smoky bbq sauce
1 tbsp soy sauce
1 tbsp Worchestershire sauce or just add more bbq sauce
1 olive or vegetable oil
