 Post subject: what to do with my Brown Miso

I bought it to make chickpea noodle soup...

and now I've got a lot of brown miso left. what can I do with it? most recipes I've seen calls for white.

keep it in the back of the fridge for a decade, and use it as you need. :-)

Yes, you can keep it forever.
But when I can't find white miso, I buy brown miso, and I use it the same way Id have used white miso. I just put less than the recipe asks for, as it's stronger.

You could make miso soup (there's a recipe in Vegan eats world, and Isa does it), the green goddess dressing from AFR, or a simple tahini/miso dressing (50/50 ratio, with water).

Yep, just use in any recipe that calls for miso. It just has a stronger flavor. My favorite use? Tofu misozuke!

-If you ever do the massaged kale salad, throw some miso in at the same time and rub it into the kale -- the oil and miso with a drizzle of a little tahini is delicious.

-use it for tofu or Tvp marinades with miso/sirachi/water/ginger/garlic/onion/vinegar

-use it in recipes in place of "stock"

-way outside but I love it: add it to melted new balance/coconut oil and pour it on popcorn and then drizzle with a little tahini. You don't need extra salt if you do this.

I might be a maniac but I love to spread miso on toast and top with avocado. Any kind of miso works for that. I just think of it as mustard but with more nutrition!
