So I've just made Isa's Chickpea Cutlets from Veganomicon. Followed instructions exaaaactly and I took one out of the pan. It's really browned and firm to the touch but when I pull it apart, you see all the gluten strings. Is that normal? I posted about gluten strings in finished goods and the response was that you shouldn't really see them and that's why people prefer to bake burgers/patties with VWG.

Also, I want to avoid using gluten anyway as it often gives me a stomach ache. Can I use chickpea flour for these cutlets? I know I know it changes the recipe but they do taste really good and I'd like to be able to make them again but not with VWG.

With most gluten/seitan recipes, you can sub up to about half of it out with soy flour or mashed beans (better: a combination of the two) and get a similar result. It gives me stomach problems as well.

Mine usually have some strings in the center so they are probably still a little raw, but it doesn't seem bother my stomach. It helps to make them very thin and fry them on a lower temperature so they have more time to cook through. Baking them in the oven might also help.

If you google 'gluten free chickpea cutlets' you'll find lots of recipes for gluten free versions.

I prefer to bake them, the texture is much firmer and enjoyable to me that way. They also get nice and browned in the oven so there is really no need to pan fry and then do the oven imo. You can salvage the ones you pan fried by baking them for half the time it calls for in the recipe.

I've had this problem a lot too. Even if they aren't harmful, they don't have a good texture when they are underdone. I haven't made these in a while, but it helps to make them thinner, and to bake them rather than pan fry.

I bake the cutlets as well, usually at 375 for about thirty minutes (flipping after 20). No strings! Never tried making them gluten free but I know there are some good recipes out there.

Oh, I missed the gluten free part. Gluten is what give these their meaty texture. If you sub chickpea flour, they'll basically just be bean burgers. They might be tasty, but it wouldn't really be the same effect at all.

I like to grill mine on a george foreman grill, if you happen to have one try it. I think it works because it squishes them down so they get cooked well on the inside.
