What should I do with this tofu cheese?

Post subject:  What should I do with this tofu cheese?

So I just finished making this (http://reciperenovator.com/special-diets/vegan/vegan-how-to-make-tofu-cheese/) tofu cheese. It tastes really good, but I have no idea what to do with it. Any suggestions? The recipe's author gives two ideas - fish sticks and salad, but neither of those appeal to me.

When I have that stuff I just eat it with crackers.

How making some sort of modified brushetta recipe. I have not tasted it yet but I gather it spreads the "cheese" can be the first layer then think about what veggies or fruits would make a good combo with it (asparugus and plum tomato?)

I do the cracker thing. It's really good as grilled cheese or with sliced apples. For lunch today I had it on homemade bread with heirloom tomatoes. Yum! I need to make some more this weekend.

How did I not even think of using it with crackers? These are all awesome ideas! The cheese recipe made enough for me to make several things with it, so I'm way excited to try it in different ways.

Do you guys think it could stand in for paneer in palak paneer?

Hey, I'm so glad you like the cheese, even though you weren't inspired by my suggestions. It could indeed stand in well for paneer, or for feta in a Greek salad, or for blue cheese in a blue cheese dressing. I thought it went best with fruit. So good with fresh juicy farmers' market peaches. But the season for them is now over. I'd pair it with apples and pears for fall. I also loved it spread on english muffins with jam. It would probably be great on a bagel too. I also put it in sandwiches with lettuce, tomato, onion, mustard, veganaise, etc. and crumbled or cubed it on salads. Mmm, now I can't wait till my next batch is done at the end of the month! I'm also thinking it might be good on a pizza.

Hello Stephanie! The cheese is amazing! I can't wait to try your tofu misozuke recipe. Thank you very much for the suggestions! I think I am going to try a blue cheese dressing with it next. Last night I made cheese/basil/roasted tomato sandwiches and they were excellent.

Rhizopus - I also thought it might be good with fruit! I'm going to get some bagels and spread the cheese on them with some fig butter. Pizza sounds great, too!
