Hi everyone - in particular, everyone living in the Netherlands, I was wondering what kind of coconut milk you use. I've already come across many healthy recipes that include coconut milk, but I find it hard to find one that I can really consider healthy. I try not to buy anything canned because of BPA, but then packaged versions tend to contain lots of thickeners, and trans fat. So have you come across a really healthy version, and where?

I tend to buy the Albert Heijn store brand in the tetra paks. I started buying these not because I'm worried about BPA in cans, but just because they're smaller, lighter, and I rarely use a whole can at once. I don't have any right now, so I can't check the ingredients, but I'm fairly sure I checked it before buying it and if I recall, it's just coconut milk with no additives.

I usually don't want a whole can of coconut milk either. My solution is to keep a boxed block of creamed coconut (santen) in the fridge. If I want coconut milk, I cut off a quarter or a third of the block and dump it into the pan that my veggies are in along with about a half to one cup of water, depending on how much liquid I want. The creamed coconut will dissolve in the liquid as it heats up and become very similar to coconut milk. The blocks are much cheaper than actual coconut milk and they are shelf stable so you can use the exact amount you want and store what's leftover.

Hey, thanks for your replies. I'm now using the Albert Heijn packs; they do contain three emulgators. Thanks for the santen suggestion, I'm going to try that! That way I'll also use far less packaging material.
