I have a couple of kilos of green tomatoes that are not going to ripen.

Any suggestions?

Chutney! Equal amounts green tomatoes, onions and apples, and (I'm sorry I don't remember the amounts) sugar, apple cider vinegar, mustard seeds, fresh mint, salt and cayenne.

Or how about a cooked vinegar-based chutney? It comes with the bonus of keeping for a while like jam.

This is the first recipe that popped up on google and it already looks good.

Fried green tomatoes are pretty awesome, especially when dipped in a home made cashew sour cream or ranch dressing.
I have added diced green tomatoes to chili before.
There are several recipes using green tomatoes in the cook book 660 Curries. You could probably google "Indian green tomato recipes" if you don't have that book.

I've seen some really tasty-looking green tomato curry recipes. Haven't tried one yet, but I have some green tomatoes from my garden that I need to use, so that's what I'm thinking about.

I just made green tomato apple chutney today from Fresh from the Vegan Slow Cooker. Smells delicious and I used up all of my unripening tomatoes.
