I just made almond butter for the first time. It turned out very tasty, but it took more than 20 minutes in my food processor (I used two cups of almonds). Does it usually take that long or should I have done something differently? Is it better to use a blender? And of course I would love it if people would share their favourite nut butter recipes.

I make nut butters in my Vitamix blender, but most regular blenders aren't powerful enough, so your food-processor is probably the best choice. It does take an awefully long time to make nut butter in a food processor. It may help to add a little oil to get the smoothness going.

My favorite flavors: roasted pumpkin seed; sunflower-vanilla; walnut-cinnamon; hazelnut-chocolate-protein/mylk powder (aka 'not-tella')

ETA: another option is to soak your nuts in water for a few hours so they become softer. The shelf-life of your butter will decrease to one or two weeks max and you'll have to store it in the fridge. But if you use a lot of nut butter, that might not be to much of a problem.

I've done it in my cuisinart food processor. My blender would definitely not handle it. I don't use a recipe, I just blend roasted almonds until they turn into nut butter, but be sure to give your food processor some breaks so it doesn't overheat. It takes about 15 minutes of processing to work. It's kind of magical because it doesn't seem like it's going to work and at some point you've got this big ball of blended almonds and then magically, a few minutes later it turns into butter.

Exactly!

I think my blender is fairly strong, so I may try using it next time. On the other hand, my food processor didn't seem to mind - didn't get warm at all, so maybe it's not a problem.

Yeah, I don't think that amount of time is unusual for a food processor and probably a blender, too. I just know that my blender would not handle it without some (a lot) of added liquid.

I use a Vitamix too, to make tahini, and walnut butter. Since walnuts are a lot softer than almonds, they should turn to butter a lot quicker if you're stuck using a food processor.

Food processor here. My blender (blendtec) will handle it but it's a pain to get out so I just let the food processor run.

I've used my immersion blender and it works pretty well too.

Almonds is a very hard nut - it takes about 15-20ish minutes for me to get a nice butter (no oil!)

For me it goes like this:

Coconut
Peanut But
Cashew
Almond<<--- longest

I've not played with pecans, hazlenuts etc, but I think the "harder the nut, the longer it takes." I use my food processor. :)
