i bought a bunch of huauzontle at the mexican grocery because it looked interesting. wikipedia says it can be cooked like spinach or broccoli. any suggestions?
I bought some and nervously added a bit to beans and then accidentally let the rest mold in my fridge, so I'm hoping someone will post some good ideas here!

there is a LA times blog about using it, and a few others when i did a search, but mostly it's people waxing orgasmic about some very typical cheese fritter that's made with this green.
