 Post subject: Marinade: refrigerate overnight?

I prepared the marinades for the food I'll cook tomorrow (I'll marinate it tomorrow), and I wonder if I should keep it in the fridge overnight? Will I give food poisoning to everyone if I leave it covered on the counter until tomorrow afternoon? One is red wine, soy sauce, oil, balsamic vinegar, and garlic, and the other is broth, oil, soy sauce, maple syrup, liquid smoke, apple cider vinegar, and garlic. None of the ingredients stay in the fridge normally (other than the open bottle of wine), so it should be ok outside, right?

I would be iffy on the broth myself. I know if I leave broth out (by accident), it goes bad.

I marinade tofu a lot, and I always keep it in the fridge, just in case.

If you've got the space in your refrigerator, I'd put them in there. Once garlic is chopped, I think it goes bad quite a bit more quickly, and broth can go off as well.

It would be fine overnight. Marinades used to be used to stop food from going bad out of the refridgerator!
