I want to make the peanut butter pillows (VCTOYCJ) and chai snickerdoodles (PPK blog) this weekend to have for Christmas. Should I freeze the uncooked cookies, or make the cookies and freeze them? I've never done either, so I have no idea what would be best.

i would freeze the uncooked ones. i've never tried freezing baked cookies, but i freeze cookie dough all the time.

for the pb pillows, you should freeze the baked cookies. actually i'd just freeze all of them baked. now i can't remember who did that for their wedding, but they blogged the whole thing about freezing baked cookies a few weeks in advance.

I freeze cookie dough all the time, as long as it's not in the freezer for more then a few weeks, the texture and flavor should stay the same.

I'd say freeze the baked cookies! Anytime I've ever done that, they've come out of the freezer just as good as fresh.

I love freezing already baked cookies. You can take them out one or three at a time and thaw them quickly for near-immediate eating. Or you can just have a go at them straight out of the freezer.

My sister did, too. It was 1984, though, so she didn't blog about it. My brothers and I ate some of them and she was furious Mint Nanaimo bars! I freeze cookies all the time. Make sure you get as much air out of the bag as possible if using bags. Alternatively, I have frozen squares (bar cookies) or frosted cookies in a single layer on top of wax paper on a cookie sheet (to prevent them sticking together) and then when they are frozen put them in a freezer bag or a tub, with wax paper between the layers.

Cool, thanks! If I freeze cookies today, do you think they'll be good on Christmas and Boxing Day?

At work, I've frozen big batches of baked cookies and thawed them a week later on the counter with no loss of texture, taste, etc. My instinct is that 2.5 weeks would be fine, but I can't say from experience.

I freeze all my cookies and eat them, frozen, right out of the freezer...just one more reason that some consider me rather odd.

Yay, so glad I found this thread! I made waaaay too many cookies and then got sick so I couldn't bring them anywhere. As tempting as it is to just live off cookies and pretend that fights a cold, I'm sure I'll be happier having an emergency supply for later.

At the bakery, we puck (form) the cookies and freeze before baking, then bake as directed except with some added time, since they're frozen.
