I made a batch of the Colby cheese from the Uncheese Cookbook yesterday (using the Chedda variation, which adds miso) and it turned out excellent. I forgot how good this stuff is. Just did a grilled cheese in my panini press with it and it was delicious- the cheese doesn't melt but it gets soft.
I bought that book years ago & have yet to make a recipe from it. I think you've convinced me to make this tonight!
