My thanksgiving menu is: mushroomy stuffing, mashed potatoes, yams, tofurkey, sautéed green beans, roasted brussels, pumpkin pie and apple quince crumble! Oh and a jar of jellied cranberry sauce (heh) and lots of yummy olives and pickles. Oh and Pumpkin ice cream. Omg I'm so excited.
Oh and I got so many free things from my work for produce culls: all the yams, onions, mushrooms and apples, some brussels... A bunch of strawberries and satsuma oranges i'll just stick on a plate... Lemons and limes for drinks... I'm happy. Oh and finish-bake at home rolls...

Looks like I'm flying solo (hubby is going to a family friends house so he can eat meat).

Mushroom and sausage sourdough stuffing Mashed Yukon gold potatoes with chickpea gravy Roasted broccoli Roasted carrots Pumpkin cheesecake Either Chardonnay or Pinot Noir

Vegan components of our Thanksgiving will be: -PPK seitan roast with mushrooms and leeks -Stuffed butternut squash -Mashed potatoes -Roasted brussels sprouts -Sauteed garlicky kale -Steamed carrots and corn -Chickpea gravy -Cranberry sauce Dessert will be pumpkin pie, gingerbread apple cobbler and homemade vanilla ice cream.

I am making a last minute change. Instead of sweet potatoes, I decided to have roasted squash. A couple weeks ago, we bought a bunch of squash at a squash farm. The squash I cooked up better be the best tasting squash ever. It has the thickest shell I've ever seen on a squash. The only way it has survived this long is if it is tasty because it was a bit of a pain. I microwaved it for a few moments to make cutting it easier but I cut off the shell then cubed it, sprayed it with olive oil and sprinkled it with salt & pepper.

My tofurky is is the oven, as in the stuffing (which is dressing, really, I guess), the cream is whipped, and I'm drinking cocoa. Mom did a fantastic job on the cranberry-orange sauce, and it's taking a lot not to eat several spoonfuls right now.

I'm keeping it simple with a seitan-mushroom-gravy type potpie filling, but over biscuits. kale salad VPITS pumpkin pie.
Trying to figure out some sort of creamy topping for the pie - don't have the time for rad whip, don't have any full fat coconut milk... any suggestions? Do have lite coconut milk, cashews, almond milk, powdered sugar...

I'm glad I'm not the only one making 2 roasts. I'm making gardein and tofurkey. My husband says "the gardein says it feeds 8, the tofurkey says 6, there are 4 of us". The leftovers though will be yum.

The first round is done. Everything is delicious- Mom loves the cranberry sauce. The tofurky was so good! I roasted it along with celery, fennel, carrots, and onion. Looking forward to dessert!

we had: tj's roast with roasted root veggies stuffing corn bake miso gravy mashed potatoes cranberry sauce winter greens salad (kale, collards, chard, tatsoi with pomegranate, pears, roasted carrots, parsnips, and shallots done massage kale salad style. bonus points for the greens coming from the garden) potato rolls (v'con recipe) roasted brussels sprouts sweet potatoes pumpkin pie apple pie
so freaking good. and we're going to have leftovers for a week.

I had tofurky for the first time this year - cooked it in the toaster oven at work. I didn't plan ahead very well, so ended up just basting it with orange juice. It turned out awesome. I was surprised by how much I liked it, actually. I'm going to be watching for them to go on sale after the holidays because I'd eat it year-round.

How did everyone's dinners come off? I did the Gardein fake turkey with garlicky roasted red potatoes, some stuffing, green beans, and corn. My ex brought crescent rolls, a cake, and some wine. I also made a vegan ham roll, the brand was Vegetarian Plus, from Whole Foods. I was the only vegan in attendance (it was my ex, his friend, and my daughter) but everyone liked everything. The ham was particularly popular, I will probably make it again for Christmas. Good times!

Ate so many different things.
Trader Joe's Turkey-less roast basted with olive oil/paprika post-roasting time. Was not particularly impressed, will be going back to chickpea cutlets next year I think, mashed potatoes held separate for me from the larger batch, Terry Hope Romero's cornbread stuffing (we have leftovers, thankfully), pumpkin rolls from vegan dad, vegan samosas, roasted brussel sprouts and sweet potatoes (roasted with maple syrup & olive oil and a little balsamic for some), wild rice pilaf made by the host, this carribean greens dish that was very good with a green I'd never heard of before (!), and the squash/chard soup thing that my brother's girlfriend made. So. Good.
Then I went to my friend's vegan dinner which was a lot less traditional with red lentil soup & apple sauce (they did have roasted squash though I didn't eat any since I was pretty full!) and I brought one of the pecan pies I made to eat. So good, especially considering I had to sub half coconut oil and half canola because I forgot to bring earth balance with me to my parent's place.

Due to icy road conditions, my hubby stayed home with me and the menu changed slightly. I ended up making:
Chickpea cutlets (Vcon) Sourdough, mushroom, and sausage stuffing Mashed Yukon gold potatoes Chickpea gravy (AFR) Roasted carrots Pumpkin cheesecake (VPITS) A bottle of Pinot Noir
It was the best Thanksgiving I've had in over 15 years!

Our menu:
festive tart (Let them eat Vegan)- pretty good, I would make again! traditional stuffing (Real Food Daily) Rosemary gravy (Let them eat Vegan)-awesome! Mashed potatoes mixed with Sweet Potatoes and green onions (Let them Eat Vegan) daal green beans apple squash pudding cake with vanilla ice cream
We were stuffed and happy!

The dinner went really well- Mom and I had an awesome time cooking. There was no mess because we cleaned as went cooked (this was unprecedented) and most of the stuff was stuff we could both eat. The coconut nut milk whipped cream was ridiculously delicious- my brother was raving about it. My first vegan (or vegetarian, for that matter!) thanksgiving was excellent!

mashed potatoes whipped (in the kitchen aid) with earth balance and follow your heart vegan sour cream are SO GOOD. i only make them like this for holidays, and it's my favorite part of the whole thing.
