My kraut is working right now, hopefully this time it won't turn to funk. I also have some quinoa rejuvelac about ready to make cheese. I also started some rye berries to turn into rejuvelac. I just had a round of antibiotics I think they f-ed up my digestive track so I'm trying to eat lots of naturally fermented stuff.

Nice topic!
Current projects: -Quinoa rejuvelac ready to be bottled and refrigerated -Smoked Provolone from Artisan Vegan Cheese air-drying (initially a disastrous oily mess like my previous attempt with the cheddar, but I think I may have saved it with a final blend in the vitamix after cooking) -Soy/cashew yogurt that I just popped in the fridge this morning after sitting 9-10 hours overnight -Cucumber kimchi fermenting (needs another day or two, I think)
Ongoing projects: -Vanilla extract (Just some vodka with a bunch of scraped, bruised, and chopped up vanilla beans) -Preserved lemons -Tofu feta in its second week and near complete

i have a jar of plum liquor under my bed. currently no pickles in progress yogurt experiments in progress but no good ones yet.

Cashew cream cheese, cashew cheese for gruyere, and meltable cheddar from Artisan Vegan Cheese. Two monster mason jars of do chua in the fridge that I made yesterday. Also, I have my sourdough culture sleeping (more like starving!) in the fridge.

I finished another batch of rejuvelac today, and have a bowl of cashew cheese fermenting that I made with the rest of my last jar of rejuvelac. I'm out of agar powder so I will probably just use the cashew cheese for a soft chevre style cheese.
