... and where do you buy it? I used to buy multi-packs of the stuff on Amazon but I feel like the prices have gone up a crazy amount over the past couple of years. Same thing with iHerb for individual bags. I'm wondering if that's true across the board or if those retailers just happen to be more expensive? Where are you getting yours and roughly how much are you paying per pound?

just under $5 for a 1.5 lb bag at the ps coop (bob's red mill). it used to be about a dollar less, but i can't remember whether the price went up gradually or all at once; i just noticed one day that it was more than i was used to.

$7 for a sealed bag of Bob's Red Mill, or ~$2/lb (I think it's a little less) for Bob's Red Mill from the bulk bins. You can guess which one I actually buy.

The 4th st coop used to have it for $3/lb in bulk, but I don't know if they still do. You can buy a 25lb bag of it from bobs red mill and it comes to about $4/lb incl. Shipping. I did that and it lasted me 3 years.

i am thanking every lucky star that i can get it for about $10US/kg in 1kg bags. it used to be i had to buy it in a 10kg bag at that same price, no smaller packs or lower prices, and it was a bisque.

I buy in bulk from earth fare (similar to whole foods but smaller)
according to my receipt I pay $5.49 a pound.

I'm jealous that coldandsleepy pays $2 a pound! Maybe it's time I finally explored the small co-op grocery store in my town and see what their prices are like! It's just out of the way from my normal route when I do errands and such.

The cheapest I've found here was about 5euros/kilo. Too bad they're usually out of it and elsewhere I'd have to pay over 10 euros...

Sadly we lost that source at the co-op and haven't found a replacement, which is a shame. I think Bob's Red Mill isn't organic, so we wouldn't carry that. Or maybe there's another reason--ordering can be complicated.

Yes! Is this not a common thing? It's mostly rice flour and cornstarch, and I've never had any issues subbing it in seitan recipes.

Bob's Red Mill is usually 10 bucks a bag in Vancouver but it goes on sale for 8 and I stock up. The bulk bins are around the same price as the BobRM sale price.

(Not that "just" being a dumpling is any kind of anti-dumpling slur, it's just a dumpling is a mostly starch and seitan is mostly protein)

I order my gluten from an online miller shop in 5 kg bags. They have 1 kilo bags too, but then the shipping costs more than the gluten itself, so I get the big bag. Shipping included, it costs about €4.50 per kilo, that would be $2.90 per pound. Seems like Holland might be a sweet place for vegans after all!

Shamini, I was going to suggest like Cornelie mentioned, that maybe it's available in Denmark from a miller or bakery wholesaler. If you can't find one locally, this place ships within Europe. (The website is in Dutch, but if you can't figure it out, one of us Dutchies on the PPK should be able to help you. Or you could e-mail them.)

I still haven't ordered from them (I have to figure out a time when I'm home long enough to take delivery), but their prices are so much more reasonable than in the health food store here. The Biomarkt in Amsterdam sells 250 g for around 13 Euro. At the Zuidmolen, 1 kilo is 3,47 Euro. Huge difference!

Cornelie, how long does a 5 kilo bag last you? And does gluten ever go bad?

£4.20 a kg if I buy 5-10 at once (including postage). That's from Low Carb Megastore- that name of which irritates me (bring very fond of carbs), but it's the cheapest I've found who'll post to me.

10 USD per kilo. I'm happy it's available at all here.

If I bake low carb bread for Mr. Cornelie, I go through the five kilo in four months or less. I stopped doing that a few months back, and now I use it up a lot slower. Let's see, I make about one big batch of seitan a month. That's 3-4 cups or 360-480 gram of gluten, so the 5 kilo bag will now last me something like a year. From what I've read, a year is a relatively safe period for using up the gluten, especially if it is in an airtight container (which mine is not..). If you want to keep it for longer, you can store it in the fridge or freezer.

Depending on how much seitan you make and eat, 5 kg might be a bit excessive though. The miller shop you linked too also has good prices on nuts, dried fruit and some other staples, so you could order some of that along with a smaller amount of gluten to make the delivery cost worthwhile. Or you can of course try and find a 'gluten buddy' to split your order with.

I think the Bob's red mill bag is like $3.50 at my food co-op? Most of their stuff is around that price there. I don't remember if they carry VWG in the bulk foods section or not.

The shipping costs are sort of high, but I figured out that if you order two 5 lb bags it doesn't go up that much from one 5 lb bag, so if you order 10 lbs at once (and live in the 48) the total cost per pound including shipping would work out to something like $4.16. Of course I've never ordered from there, so if anybody else has feel free to step in and review your experience.


Yes, it can go bad. Any flour can go rancid, which is really disgusting and unfortunate if you use it without realizing. :( The shelf life of VWG is usually a year or two depending on the climate you live in. After that you can keep it in the freezer for a while with no adverse effects. I am just now using up this big batch of VWG I put in my freezer (double-bagged in freezer bags) in June of last year, and as far as I can tell there's no difference in taste/elasticity from before I put it in.
