I have a 1/2 box of these and I'm not really sure what to do with them. Don't have the stuff for pad thai, and would like to make something else (also, no soup), but I'm not sure what to do with them...
I have a daikon the size of my forearm and various other veggies: lots of greens, beets, turnips, carrots, broccoli. Any ideas on what you would do with it?

do a hunt for a recipe for masala noodles. it's basically fried up ginger, garlic, a tomato or two, cilantro, some garam masala, i always throw in turmeric as well.... and whatever veggies you want. super yummy indian style fast food, as spicy or bland as you want it, as many grated up veggies as you want as well.

You could easy do a soup with a bunch of ginger & garlic and those noodles and veggies.

"Chloe's Kitchen" has recipe called Peanutty Perfection Noodles that call for those type of noodles. You could probably add whatever veggies you wanted. Basically noodles, veggies, and peanut sauce. It is a family favorite at my house.
