Any suggestions for what to do with 10 or so small Japanese eggplants? I'm looking for something very simple and fast to make for a weeknight dinner.

I replaced the mint with cilantro and just roasted them instead. SO good!

I actually made these tonight! All I did was slice them longways about 1/4 inch thick, brushed them with some canola oil, added garlic powder, paprika, salt, and pepper and threw them on the grill. So good!

And this for the win! Everything looked good, but we had all of these ingredients at home. We served it with brown rice, cilantro, stir fried tofu, carrots, and zucchini. So good. Thanks!
