Hi! I was gonna make this green bean casserole recipe, but I could not get any vegan cream of mushroom soup. I do have all the other ingredients plus cashews, soy milk, and bouillon. I'm totally willing to wing it and eat it no matter how forked up it is, but I'd love any suggestions you might have for not forking it up! Thanks!!! <3

I also think you could totally wing it by making a mushroom gravy and adding that. I'm not a huge fan of the vegan cream of mushroom soups out there. the ones i've had have a weird canned mushroom sort of taste. I think you could also just sautee up a ton of mushrooms and add in some cashew cream and maybe white wine.

I think you could use what you have along with some dried mushrooms. I say dried because when you soak them you could use the flavored liquid to distribute more mushroom flavor, although sauteed fresh mushrooms would be good too.
I always make green bean casserole pretty much like my mom made it growing up, except instead of campbell's soup I use Imagine Creamy Portobello Mushroom Soup. So just 1.5 cups of the soup + 2 cans of french cut green beans (HAVE to be french cut) and 1 & 1/3 cup fried onions.
I mix half the onions in with the rest then bake at 350 degrees F for 30 minutes. Remove from the oven and sprinkle with the rest of the onions on top. Pop back in the oven for 5 minutes until the onions are lightly browned. That's it.
I tried making it with healthier beans, like frozen or fresh, but it wasn't the same. But that's because I like the bpa-laden, sodium and chemical laced goodness it is once a year haha.

Thanks guys! IJDI, I like the white wine idea--- i have white cooking sherry.... Do you think equal parts cashews and soymilk would be a good ratio for the cashew cream?
Aubade... i almost got the french cut, but went for the frozen. It was a tough choice :-)

Wow, that looks really easy.... and yum! I'm starting to think that as long as it's smothered in french fried onions, it's going to be delish :-)

It may be too late, but fatfreevegankitchen has a recipe for green bean casserole where you make your own mushroom sauce. I'm about to start on mine right now. But I think you're right -- those French onions will make it yummy no matter what!

+1 for the fatfreevegan recipe - i've made this and it came out well +1 for throwing homemade mushroom gravy in there - i've done that too! also good.
