 Post subject: Agar powder-Arrowroot powder sub

Can I straight substitute arrowroot powder or corn starch for agar powder in the rad whip recipe? Has anyone tried this? I don't want to buy a new starch when I already have 2, but I also don't want to ruin the final product.

unfortunately arrowroot and cornstarch don't function the same way as agar at all. the agar is more like gelatin than a regular starch and it is super important in the rad whip. if you don't use it you won't be much of a whip.

cool. it's worth it. it lasts forever and you only use a small amount at a time.

also make sure you get actual agar powder and not the flakes. for some reason the flakes never seem to work properly for me

you have to use a lot more of the flakes; for 1 teaspoon of powder, you should use anywhere from 1 to 2 tablespoons of the flakes.
