So the tofurkey packages in the store have replaced the "Cranberry Apple Potato Dumplings" with cake. But the dumplings were my favorite part. Can someone please help me find a good recipe to make them myself, preferable soon so i can go shopping.

Was the potato in the crust though, or inside? Here is a crust recipe that could be veganized with EB: http://www.casalana.com/recipes/potato-pastry-crust.phpIt has made me want to American-thanksgivingize knedle though. Instead of plum filling, some apple-cranberry filling. Totally different kind of dumpling though...its a soft potato dough wrapped around a prune plum. My aunt made me some vegan when I was in Croatia with no subs...just left out the egg. It was softer than their's but that's it. Could sub ground flax or banana or cornstarch or tapioca or something.

Thanks but Not exactly what i was looking for, they had a mostly potato based filling (as opposed to a potato dough wrap) and they were first boiled then fried

I think what you want is something similar to a pyrogy recipe for the dough (try Isa's pyrogy dough from the blog), and then a simple fillling with mashed potatoes, thin-sliced/diced apples, a handfull or so of dried cranberries, and some salt and maybe a sprinkle of herbs and a dash of apple cider vinegar. I only had those things once, but I imagine that would result in something similar-ish?

Im gonna try the pyrogy recipe this year to see if it works unless anyone has a better idea by now
And seriously, why did they stop selling the dumplings, they were my favorite part!

since ya'll are so smart maybe you could give me a little more help...apples, Im assuming to chop/dice them for the filling, but cook them first? yay, nay? also cranberries, which will work best, fresh, frozen, dried, rehydrated?
