Has anyone else had this problem? I am thinking it may because my earth balance was melted when I mixed it with the powdered sugar and cream cheese...I used both artisan vegan cream cheese and some Galaxy foods cc. I left it fridge overnight but its more like an icing consistency.

yeah, your earth balance shouldn't be melted. normally you can add more powdered sugar until you get the consistency you want, but that's a lot of melted EB to have to counter-balance.

I figured that was the problem. I think I will try to turn into a cheesecake/gingerbread thing. So much experimenting lately.

Try chilling it in the fridge for a while and after it thickens, whip it with the beaters again. That might help.
