Normally, when I'd have a bunch of ripe bananas, I'd make banana bread or banana muffins. Now, however, I don't have access to my oven. I have ripe bananas, a microwave, a toaster oven, and a stovetop. I've done some pancooked with honey, cinnamon, ginger, and cloves, and they were delicious. Any other ideas?

do you have access to a freezer? when i have extra bananas, I just peel and slice or mash, then freeze. works great in smoothies, or thaw and then bake.

I'm crazy for smoothies. I like frozen banana, almond milk, coconut extract, and vanilla... We go through so many bananas.

I don't have a toaster oven myself, but I know my mother bakes stuff in it...can you do that?

I vote freeze them for smoothies or soft serve, or else just sliced up on cereal or oatmeal, or halved and spread with pb and then squished back together :)

Thanks for the suggestions; I think I'm going to go with the banana pecan pancakes! (I already have a freezer full of bananas!)

Slice in half, put on a stick, dip in melted chocolate and freeze for frozen chocolate covered bananas! Although it's not really frozen treats weather right now.

I would just eat them all cooked in oatmeal, sliced up in cold cereal and/or soy yogurt, and in PB sandwiches. But then I am a shiftless, no 'count layabout, so you might want to take anything I say under advisement.
