Oh and did anyone mention the La Victoria (and other brands) vegetarian refried beans? Most americanized brands have a vegetarian version or their beans may even be vegetarian. Look for fat free (add some if you want..) or vegetarian or if it is El Paso, La Victoria or other similar brands, just check their refried beans. I've gotten some super cheap on sale from the regular grocery store and I love me some refried beans.

Which also reminds me of corn tortillas. Depending what area you area in, you may be able to get a huge stack of corn tortillas for cheap. Just buy the large stack, freeze most of them and use as needed. We cheat and get ours from a latino market or the asian market but I've seen larger stacks in regular grocery stores too.

Most of them aren't, but a few are. I eat the spaghetti one a lot because it's the only vegan one the grocery store nearest to my work carries.

Also I know this isn't a convenience food, but winter squashes are cheap and you can easily toss one in the oven halved, watch a television show and drink a beer, then fill up on squashy goodness.

in canada, the President's Choice brand has "PC Blue Menu Bulgur and Quinoa with Chickpeas" and a couple other sides in the frozen aisle that are vegan. they're pretty tasty too. it looks like they have vegan wings too, but i haven't seen them in our local store.

Regarding Ramen- I've only been able to find the vegan Ramen at one store and it's a store I never go to so what I usually do is toss the seasoning packet, heat up the noodles with water, drain, mix in some jarred kimchi. Voila! Although I do like the salty goodness of the seasoning packets occasionally.

I like their organic house brand of white and yellow tortilla chips! Buy 'em weekly for nachos!

Also I buy original Rotel in bulk, from nachos to stews I use it up!

Oh yeah, Target also sells Rotel and its cheap. Love Rotel.

Quick Thai Kitchen update - I checked my cupboard last night and the Pad Thai is also vegan, and it's a just-add-water item. The Sesame Stir-Fry that I mentioned upthread requires actual cooking, but is still ready in under 15 minutes - lazy enough for me! They both make awesome bases to add veggies or tofu or whatever too, if you want to get fancy.

Good to know! I know when they first came out I checked every one and all of them had whey.

I really like the Amy's light spaghetti and meatballs. The meatballs are really, really good! I wish they sold those in a bag or something. That's the only light and lean vegan meal that I've found.

My favorite Amy's is the baked ziti--I love that one.

Maybe it's just me, but I find peas to be a strange addition to baked ziti. It is good otherwise, though.

Yup - it is cheap, 99 cents a can compared to $1.75 at the store. They also have Gardein for cheap - I buy the strips for the boyfriend - like $3 a bag compared to $5 at the store, sometimes as cheap as $2.50. Also cheap is the Justin's nut butters, the PB&CO butters and Blue Diamon Almonds, Amy's Bunny Snacks and nuts...

I am in the Midwest and one of the Meijer stores by me sells kits like vegan chili and falafel burger mixes. They are like $2.99. We took the chili camping because you just add water and a can of tomatoes I think. I'll find out the brand name next time I go there and update this post. And the Meijer brand flavored refried beans are great, and organic.

No, you're quite correct. Peas + baked ziti = wrong.

Just a note about Target- if you get the Red Card (there's one for credit or you can get one for debit) you save 5% on all of your Target purchases. It might not sound like much but if you're doing a lot of your grocery shopping (or whatever shopping) there and you're buying all of these Amy's products (which are expensive) and whatnot, it does add up. Just another tip to save money.

Peas don't belong in ziti. BUT I like peas and they're a pleasant addition to my ziti. If they would just mix gravy and peas with their mashed potatoes it would be like they're catering directly to me.

They're one of those packet thingies you can microwave in 90 secs. Great for a quick taco filling. I usually get them at Target.

Oh yeah and Whole Wheat Ritz crackers. Of course there's the obvious triscuits, saltines, etc but the WW Ritz are in a class of their own. So yummy.

Well, that kind of peas would be...still wrong.
