 Post subject: tofu skin pouches?

I'm going shopping at an asian grocery store tomorrow and I would like to buy some of the sweet little open tofu skin rectangles that they fill with rice at sushi places. I'm not exactly sure what they are called, and this store is massive with very little english on most of the packaging. Anyone have any advice how to find these? Are they frozen, are they in a can, in a bag, maybe they have some other name?

I find them in a can labeled "inarizushi no moto" and there's usually something to the effect of "seasoned fried bean curd" on the can as well.

I find them refrigerated in plastic...many have benito so watch out for it!

Yes, we see them in plastic too, usually but not always refridgerated.

You'll probably find them labelled as inarizushi or yubu chobap, depending on the type of shop. You may find them in little half-sized cans on the shelf or "kits" in the refrigerated section, like this. Be careful with the kits though, as the seasoning packet often contains bonito. I haven't seen any where the actual bean curd pouches contain bonito, but it's worth checking because fishy bits seem to sneak in all sorts of unexpected places where Japanese and Korean cuisine is concerned.

Do a google image search for aburage. You'll find lots of pictures of different brands available.

Here we always find them fresh, in the chilled aisle right on the shelf above the tofu. If you're going to a Japanese store, like Marukai, they'll likely have them that way too.

Otherwise, you might have to settle for preserved and packaged.

"Aburage" means fried tofu, basically, but there are two types. Big, thick slabs that are fried, and these, which end up as hollow shells. The difference is the thick slabs (not what you want) just look like big blocks of golden tofu.

The ones you want look fluffier, like soggy chicharones, fried pork rinds. Kind of bubbly, golden yellowish color. They are very light, mostly air.

Be sure if you buy them fresh to check the expiration date. And use them within a day or two; they go bad really quickly.

I found several different brands, all in a can, but they all had bonito. :(

i'm not sure i've ever seen the can ones that were vegan. they're easy enough to make yourself if you can get the plain ones, i'm sure maki on just hungry has the vegan recipe for making inarizushi skins.
