Hi all. My husband has finally convinced the food director of his company to add vegan dishes to the menu of the company restaurant. This is a huge deal because this is a multi-billion dollar hospital system serving millions of meals a year! The chef wants a list of about 10 dishes that would be good, inexpensive and easy/quick to make on a large scale. This is a more upscale restaurant - not the main cafeteria. Ideas???? Thanks!

chickpea picatta over mashed potatoes and/or arugula vegetable tarts (pastry layered with cashew/tofu ricotta topped with roasted/fresh veg) a kale salad with fruits and candied nuts tofu-eggplant bao roasted beets topped with cashew cheese (either served together warm as an appetizer or as a salad topping) rosemary-braised lentils with broccoli raab and concentrated tomatoes (pulled off a restaurant menu, hence the shmancy description)
you might want to take a look at the vegan menus at the wynn and encore resorts, they have vegan options incorporated into almost all of the restaurants there, so it's probably a good model for large scale operations. They're very heavy on the gardien, just fyi.
And congratulations to your husband, that's an awesome accomplishment!

Chili is easy to make on the large scale. And inexpensive. And shepards pies!

Thanks for all the tips!!! I should have said I have every single one of Isa's and Terry's cookbooks + others, but couldn't think of what would work restaurant-wise. These are all great! Think of how many chickens/pigs/cows/fish will be saved!
