I use 3 C. cauliflower and 1/2 C. red pepper in place of the zucchini. It's great over couscous, as well as brown rice.

I also nominate library cookbooks! This has nearly changed my whole life AND saved me some serious dough at the same time! I've been able to test-drive cookbooks and then decide which ones I absolutely need to own. Awesomeness!

I loved this the first time I made it "as is", and have made it loads of times since with different vegetables. Sometimes we have it as a side dish, but often I just make a huge bowl of it just for me. Yummy.
