Do you think I can use rehydrated soy curls for rehydrated yuba skin in a vegan menudo recipe? I cannot find yuba around here often, when I do I only find it already in a container with spices!

I think it'd work. I could see yuba being more "tripe-y" in texture but soy curls would definitely be tasty, if texture isn't your main concern.

I like texture but I have not had menuedo for like 20 years so maybe the soy curls will be cool.
