At Maoz Felafel in Amsterdam the have both regular pickle slices (gherkin) and bright purple pickled eggplant as options at their add-on bar. I'm addicted to that pickled eggplant!

I am eating a saucy buffalo tempeh contraption served over steamed kale with lentils mixed in. Never thought I'd like kale this much. It's almost juicy!

I got a falafel wrap in Chicago that came with pickled something. I thought it was beets, but seeing those pickled turnips and how they're purple makes me think they were turnips. It was awesome. The only falafel you can get around here is from Pita Pit, so…not traditional.

My friend recently gave me some homemade sauerkraut that I think is going to become a reuben bowl... Any ideas for how to translate the rye bread into bowl form? Maybe just quinoa and some toasted caraway seeds?

Huh, everytime I've gotten a falafel wrap there's been pickled stuff in it, didn't realize it differed everywhere.

Yes, definitely just add some caraway seeds and maybe a touch of black molasses to get that awesome flavour.

Sounds yummy! I once made a Reuben salad with rye croutons. It was good.

Love the reuben bowl idea. I think barley or kasha (buckwheat groats) would be a good rye substitute.

I would just add sliced rye toast after the bowl is done, on the side cut into squares. This way you can eat the salad with it, if the salad is something like sauerkraut, caraway seeds and Ruben corned beef seitan or something. Croutons may be a waste if you eat it too slow, since they will lose the crunch. Toast points or squares is the way to go in my opinion.

Chicki, that bowl sounds soooo good.

I threw together one yesterday that was good, fast and low-carb (out of laziness, I didn't have time to make rice or quinoa or anything).

Massaged some kale with a touch of olive oil
Spinach
Mushrooms
cast iron dry-fried tofu and cauliflower (used a little bragg's)
green onions
tomato
Isa's Franks's/tahini sauce (sort of - couldn't be bothered to look it up so it was literally just tahini, frank's, garlic salt, water to thin)

Mmmm Chicki that bowl does sound good...there is a very decent possibility I will be eating that for dinner tonight, although I'm out of black beans since I made a huge batch of the black bean burgers from V'con the other night. I may chop one up as the protein on top instead though...I think it'll be good!

Roasted golden beets are really good with some roasted onion sliced, a light vinaigrette, and fresh tarragon. If you don't have tarragon, use something else licorice tasting, like roasted fennel or crushed anise.

Made some lunches tonight, but realized they were basically like a bowl. Variation on mexican millet (Vcon) with large can of tomatoes, refried pinto and black beans, and to be topped with avocado mash. Low on veggies but high in yummy.

I've been thinking about starting a blog devoted solely to bowls. I alternate between thinking bowls are played out to thinking they're timeless; between thinking it's too niche to thinking it's only a blog, why not? If I do it, I want it to look nice and I'm hesitant to invest in the design work if I'm going to hit a brick wall in terms of ideas a few months in. Ugh.

I could eat three bowls a day and never get tired of them, but that's just me.

How can bowls be played out? They're such a free-form kind of meal, I don't think they've got an expiry date.

Funny you should revive this thread, I almost posted on Wednesday about the bowl I'd made but then I wasn't sure it was interesting enough to resurrect the thread, but anyway it was lots of diced cucumber and red pepper, covered with cold leftover sunflower mac sauce, some chopped up leftover cooked broccoli, courgette sautéed with garlic, chickpeas, tomato paste, hot smoked paprika and a sprinkling of balsamic vinegar and lime juice. And I scooped it all up with tortilla chips. It was pretty delicious!

The restaurant where I work had a nice bowl on special yesterday; maybe I'll try to create something similar at home. It was fresh ramen (just the noodles, no broth) with wakame, roasted sweet potatoes, shiitake mushrooms, fried tofu, and teriyaki sauce. I tried it, and my tastebuds were singing.

Mmmm I need to get back into bowls...I'm glad this thread popped back up and reminded me! The issue is I always make lots of ingredients and think I'll have bowls for the week...and then I get super hungry and they're gone in like two days..

I made two bowls for lunches and dinners last week. I love bowls because I can go ahead and just put everything in their pyrex containers, then just grab and reheat for lunch or pop into the oven to heat up when I get home from work. Anyway last week I made:

Whole wheat couscous, roasted butternut squash cubes, marinated baked tofu (soy sauce, balsamic, liquid smoke, maple syrup), and red hot tahini.

Brown rice, fresh 'super' greens (from a tub) that wilted nicely when reheated, marinated grilled tofu (this time lots of garlic, soy sauce, rice vinegar, etc), and a very lime-y peanut sauce that I threw together.

I love smooshing all of my food together and coating it in the sauce and just eating these with a spoon. Comfort food. I'm making another round for lunches today. I've got broccoli and tempeh, and I'm thinking I'll do quinoa as the grain. Maybe a cheesy sauce, especially if I decide to buffalo-ize my tempeh.

My latest lazy bowl: these chickpeas with added onion powder and lemon juice, arugula, brown rice. When I have TJ's frozen brown rice on hand, this is a ridiculously simple breakfast/lunch/dinner/snack. I've made it at least three times.

I have also been known to throw together rice, chickpeas, Frank's red hot or buffalo sauce, and avocado. Wholly Guacamole's avocado ranch is even better than the avocado for this meal. Oh my god, nomnomnom.

For lunch I made one with dirty rice, boudin, smoky kale, chickpea gravy from VWAV and, scattered over the top, leftover jalapeño cornbread crumbled and browned in Earth Balance with garlic and chives.
