Actually a smaller grind would make the water pass through more slowly. I have no advice except maybe try a plastic cone? I regularly make a giant cup of coffee in my cold kitchen, with a fairly slow drip, and let it sit for ten minutes before drinking and it's still way too hot. I do think an insulated cup would help though.
