I love my chocolate, so it's kind of shocking to me to be saying this, but lately I've been really into vanilla. So, what are your favorite desserts to highlight the vanilla flavor? I've got beans, paste, and several extracts.

I love vanilla custard on pies and fruit.
Vanilla pudding with berries, or berry sorbet if you're being fancy.

That's about it, just realised how small my vanilla repertoire is!

VCTOTW mini vanilla cupcakes with about as much vanilla butter cream as there is cupcake. It so weird, because I always expect the chocolate treats to get gobbled up first. But when I make these and chocolate cupcakes with chocolate frosting, and then mix and match the vanilla and chocolate frosting and cake, the vanilla vanilla combo far and away always wins. To the point that I've given up and I just make huge batches of mini vanilla cupcakes with lots of vanilla butter cream now.

vanilla ice cream, def home made. or awesome vanilla oatmeal cookies, and to really splurge, sandwich them together with some fluffy vanilla buttercream. or vanilla sugar cookies. vanilla blondies. vanilla pudding!

i lurve vanilla. i add it to everything, too - so any cookies get vanilla, etc.

fruit salad can be awesome with some vanilla dressing. some yogurt, add vanilla bean, toss in a bit of sweetner (or not, whatever), and toss with some fruit. yummmmm!

definitely a fruit tart is classic ! and vanilla and almond is a wonderful combo, if you want to make a frangipane/marzipan type tart as well.

or make a yummy trifle. make a whip (or get some healthy top - the best) and whip in some vanilla bean, make vanilla pudding/custard, some vanilla pound cake or sugar cookies. then layer them together in a dish trifle style. add some berries maybe? or just keep it purely vanilla. but sometimes some berries to cut through the vanilla, and highlight it, too, can be good. or lemon curd to layer, as opposed to berries!

i'm going to watch this thread!

ETA: Vanilla cheesecake!! can't forget that.

Dammit, I had to make up a big batch of French vanilla ice cream from Vegan a'la Mode because of this thread. The custardy mixture is cooling in the fridge right now.

i second the suggestion of VCTOTW vanilla cupcakes with vanilla buttercream. i am SUCH a chocolate person, but every time i make these (usually by request of my little niece), i am reminded of how delicious they are. i love them.

I have Bird's custard downstairs. I am automatically filtering it in my mind which is why my enthusiasm for it is very slightly tempered. Damn you PPK for ruining custard for me!

You could make a panna cotta with it! Maybe a vanilla bean panna cotta (coconut-based) with a raspberry or pear gelée on top?
