My friend is coming from Portland and requested them. Should I simply roast them with olive oil, salt and pepper or do something fancy?

I like to blanch green beans so they stay nice and bright green and then saute them in EB and season with salt and pepper. If you're wanting something a little more fancy you can add a splash of amaretto and flame it to burn off the alcohol and then serve the beans topped with toasted almonds.

I'm totally making this, I already have two giant bags of beans that I froze when I got way more than I could ever eat in my CSA, and I picked up the onions at tj's.

Catalina wrote: I make this every year. My mom just asked the other day if I was bringing this because everyone loves it. I make my own oven-fried onions to go on top. Do you have a recipe for your oven-fried onions? I really want to make the FFV recipe, but I'm wary of the canned onion stuff.
