All good suggestions.

You could also go with something unusual and fun like a desserty quesadilla. Or chocolate waffles from VB with cherry pie filling (yummmmmm, but as a word of warning I always have to add a little extra flour). Of course, with these your challenge would be keeping them warm long enough to serve. Hmm.

ETA: for a more make ahead but time consuming show stopper, you could veganize the martha stewart crepe cake..

Would it be possible to make an actually yummy dessert spaghetti?
With chocolate sauce? With some sort of sweet cashew cream and little cherries instead of meatballs?

Sub non-dairy milk for the dairy milk and there you are! I've had it with just ice/fruit juice, not milk, and it is tasty, but I bet the addition of almond milk would be nice.

My mom used to make sweet pasta for my breakfast when I was a kid. Either really thin spaghetti-type or the ones that look like tiny pellets (I only know the vernacular Arabic for these things, so I'm wholly unhelpful here). It was pasta+butter+sugar to the best of my knowledge. Now sometimes when I make a giant thing of spaghetti and on day four of nothing but spaghetti+EB+salt wonder what I've done to myself, I use sugar instead of salt and pretend I'm eating something new and exciting.

I know you're all dying to come over for dinner now, but unfortunately my apartment is not set up to accommodate guests.

It was more oblong than Israeli cous-cous. I just looked at the list of pasta on Wikipedia though and I think it was probably acini de pepe. It was similar to that anyway.
