I am craving old fashioned vegetable soup - with a tomato base, like my grandmother used to make. I can't remember how she made it, though. WAAAH. Okay, enough with the whining. I know there were canned tomatoes in it - whole ones, I believe, no garlic, plenty of onions, potatoes, carrots, green beans, limas, peas, corn.... very old fashioned. Vegan before it was called vegan, I suspect. Anyone got a recipe like that? I mean, I could just guesstimate the ingredients and throw them together, but I'm kind of timid when it comes to that sometimes (not with chili; check my blog - I made some tasty chili a couple of days ago and will use it for my church's chili cook off in February). I just can't remember what she did exactly. I DO remember peeling and cutting up potatoes. That was the easy part! I guess we always remember the work part!
How about this for a basic model? It looks pretty flexible, so you could swap out the beans and/or mix and match the specific veggies to suit your memory!
