We have a thread for dinner and breakfast and lunch, but do we have one for general baking?
Last night I used Kelly's chewy banana cookie recipe from vegan cookie connoisseur and made them into bars with crushed up peanut brittle inside and chocolate on top. They were so good. I also baked a loaf of whole wheat sandwich bread and some zaatar foccacia this week!

I finally baked black bean brownies for the first time. I threw chopped-up homemade peanut butter cups inside, and swirled peanut butter on the top of the brownies before baking them. I also baked a batch of VWAV Sparkled Ginger Cookies the other day; they're a huge favorite around here.

just simple pumpkin raisin muffins for the boyfriend for weekday breakfasts! also chocolate bark if that is baking - no less it is a sweet treat though!

last night was a pizza w/ isa's basil tofu ricotta and crust. that's baking, right? the last sweet stuff i baked was a round of cookies for xmas gifts: i made speculoos spread cookies, rum spice cookies, VwaV peanut butter cookies (the recipe that doesn't work bc i forgot it doesn't work), and VwaV chocolate chip cookies bc those babies are the BEST.

Lower fat banana muffins from V'con for breakfast (love those!) Apple cake from Chloes Kitchen Naan from Vegan Eats World -- that's kind of baking, right? I bake a lot. This week: I made my usual four loaves of Desdemona's "daily bread" which I make every week for my kids to eat for breakfast and sandwiches. I used Bryanna's pizza recipe to make fat bread sticks to eat with soup. I made raspberry truffle brownies from Isa's blog on Friday. I baked a huge batch of granola today (apple cinnamon vanilla) -- does making granola count as baking? Tomorrow I'm making two (count them two!) king cakes...haven't decided fillings yet. King cakes from kittee's blog. whew I'm tired!

Apple coffee cake from Vegan Diner! I haven't gotten into that book as much as everyone else seems to have, but I lurrrrrrve that coffee cake. I plan to have it for weekday breakfasts this week if my husband doesn't eat it all for dessert.

I've been baking muffins once a week for breakfasts and snacks, from 150 Best Vegan Muffin Recipes. You can read what I actually thought about all of these in the thread in the Cookbooks forum, but here is a list:
Best Basic Muffins with added mango and coconut Fresh Apple Muffins Berry Jam Muffins Dark Chocolate Muffins Parsley Lemon Muffins
I swear, muffins serve all of my baking needs. They're a breakfast no-brainer, great for snacks, satisfy a sweets craving, and savory ones make a lovely quick bread to go with dinner when I haven't thought ahead for my carby needs. I'm currently, and officially, obsessed.

- oat bars (i've been using this. they are good halfed and stuffed with nut butter and jam. - the brownies from Vive le Vegan. they are my absolute favorite. i might follow allularpunk's lead and start baking muffins. i haven't made muffins in something like 4 years. shameful, i know. ;)

I made rosemary chocolate chip cookies and corn empanadas (which are kind of a baked thing, right?) to take to a vegan meet up picnic earlier this morning. I also got some beautiful, cheap rhubarb from the farmers market on Saturday so this afternoon I'm going to make rhubarb and strawberry muffins to take to work.

ive tried the cranberry bread from happy herbivore abroad and it was tasty but soggy. Then again, that happens all the time with American recipes :/

I did the sweet potato drop biscuits from AFR for the first time. What the hell took me so long?
Our meyer lemon tree is going bananas, and I'm planning on doing a lemon genoise cake for my birthday next month, but thinking about doing some other kinda lemon baking in the meantime.

oh, i forgot baking =/= sweet stuff.
last week I made 5 different kinds of low-fat pizza to eat throughout the week. Sadly I forgot that if I make something yummy, my boyfriend will come over and eat it up. At least it means it was good.

Today I made my birthday cake (my birthday was yesterday but I had doughnuts instead, ha). Mocha chocolate cake with mini chocolate chips in the batter, filled with mocha buttercream and covered with vanilla buttercream and ganache. Pretty awesome.
Last week, I made an apple cake I saw on Pinterest and veganized (meh) and apple muffins from VWAV (yum). And my daughter's birthday cake (neapolitan ice cream cake with TJ's strawberry coconut milk ice cream).
I am so sick of sweets now, though! I got a new KAF catalog the other day with artisan breads on the cover and now I want to bake nothing but bread and savory things for like a month.

I baked scones a few nights ago, and then last night baked Espresso Chocolate Chip Cookies from Chloe's book. Cookies were pretty good, but my oven decided to go hotter than normal after I had already checked that the temperate was right, so they're not quite perfect this time.

This weekend I made a double batch of VCON lower fat banana bread. I love this recipe and always have slices of this bread in the freezer for last minute breakfasts, snacks, and desserts.

I made Isa's banana bread from Forks Over Knives and didn't like it nearly as much. I think I will stay with the VCON recipe forever. I like to keep the slices in the freezer too, so convenient.
