helgonblomma that torte looks sooooo good.

Last night I made cherry pie bars. Oh my was it good. It was a cookie crust dough topped with a cherry pie like filling. The base called for way too much flour I thought. I was having a hard time mixing it in so left out some. It came out perfect. Dare I say just a tad sweet as there was a lot of sugar in it. I will be making this one again and again probably trying some different fruit.

I tried to make brownies using the chickpea liquid stuff, basically just adapting an omni recipe. Well, it didn't work, but I ended up with what is essentially fudge instead! So I now have baked chocolate fudge, which is actually quite nice. Couldn't have made it if I'd tried.

Every time I go home the last few days I find myself baking muffins for the ICU nurses. I need to branch out and make something else, but muffins are quick and easy and I always have the ingredients for some variety or another, so they're all I've done so far.

I made the Nuts for Carob bars from 100 Best Vegan Baking... the other day.

My carob powder is embarrassingly old, as are the small amount of carob chips I had. However I really like these! I used 1/2 carob chips, 1/2 choc chips. The bars also have ripe bananas, nuts (I used walnuts) & raisins. They're thick & satisfying. I'm not a fan of raisins particularly and I would probably leave them out next time. I'm very pleasantly surprised by these however.


I just used a six ring classic donut pan I found at a specialty cooking store. I can not BELIEVE how hard it is to find a donut pan! I looked EVERYWHERE before finding one there. I get on these equipment kicks, like literally obsess about having unusual stuff. I did the same thing with crumpet rings. I had to have them, and I searched high and low for them and one store finally ordered some for me special because there was nothing local. And I have used them all of two times in the last two years lol. Another time it was little chocolate molds of which I have used three times in several years. But I have a feeling the donut pan deal is going to be different. I have three more donut recipes lined up for upcoming get togethers. :)

Cardamom Orange Muffins from 150 Best Vegan Muffin Recipes by Camilla V. Saulsbury. They have orange zest plus fresh-squeezed OJ, and in addition, chopped mandarin oranges. I substituted 1/3 applesauce + 2 tsp. oil for the 1/2 cup oil in the recipe (per Isa's guidelines in VWAV) and they came out oh so delicious and moist! I also used white whole-wheat flour instead of combination of all-purpose flour and whole wheat listed in recipe.

Mini-pizzas with my 3-year-old! We just used half a packet of GF "dark bread baking mix" that we had hanging around, but as I've honestly never had much success with GF pizza crusts I might buy it again just for this. We baked the mini-crusts for about 15 minutes, then topped them with pesto, zucchini, red onions, and Astrid och Aporna pizza cheese and put them in for another 15 minutes on higher heat. Sprinkled with chopped sundried tomatoes, too. The best pizza I've had since going gluten-free!

For American Thanksgiving dessert I made the lemon coconut bundt cake from Veganomicon. I'm so happy that we only ate 1/3 of it--I just had another slice for breakfast. I'd forgotten how delicious it is!

Since Thursday I've been baking a ton. Made the Volup. Pumpkin Pie from VPITS and Coconut Heaven cupcakes from VwaV for Tgiving. Then tonight I made Herb and Olive muffins that was posted in the forums by desdemona. Finally, peanut kiss cookies from VCC. I also made the chocolate kisses for the cookies and because I melted a ton of chocolate I also made a bunch of almond butter cups (instead of peanut butter cups). Tomorrow I'm making sticky buns for the husband. Everything so far has been fabulous.

Lots of bread. Tastiest was a walnut loaf I made to have with soup. I also started baking christmas cookies! Only one double batch of mint choc chip so far.

Last night I made the Vanilla Bean Cupcakes With Chocolate Ganache from the PPK website http://www.theppk.com/2010/11/vanilla-bean-cupcakes-with-chocolate-ganache/

I made these once before and they are great. So quick to put together, simple, and just so fluffy. The ganache...well, I ate too much of it, is so good. Husband requested more vanilla flecks/flavor next time.
