the one from Vegan With a Vengeance? I've heard that people have some problems with the carrot cupcakes in the cupcake book, but the carrot cake recipe (not specifically for cupcakes) in vwav has never failed me. if you're using the one from the cupcake book, maybe check out the vwav one. I think people have had to add more flour to the one from the cupcake book.

I made an oatmeal cookie recipe that my mom has made with great success. They came out rather dry and crispy for me, not that delicious chewy, moist goodness I love!

I think I need to add more moisture since I'm in Colorado. I'm going to experiment.

Today I made a Neapolitan cake, a triple chocolate kahlua cake, peanut butter bomb cupcakes, caramel coated vanilla cupcakes, chocolate chip brownies, chocolate chip cookie dough brownies, pumpkin spice whoopie pies, and a maple blueberry pie. I'm excited because I had enough batter leftover to make an extra whoopie pie, so I'm going to eat it when I get home tonight!

That's so good to know! That's the only carrot cake recipe I've ever tried and I'm a novice baker so I figured I just suck asparagus at making carrot cake and I've never tried again. :P

Thanks! I'm doing it all in my home kitchen, but to be fair, it is pretty big. Definitely the biggest kitchen I've ever had.

Also, I'm 99% sure that's the exact recipe Red Lobster uses. My mom worked there when I was a kid and we used to rave over those biscuits and I remember her exclaiming once, "It's just bisquick and cheese!".
