Vegan Diner banana chocolate chip bread again. My hubby is purposely not eating the bananas I send with his lunch so they'll end up overripe and I'll have to use them up this way.

i made cinnamon buns yesterday. i ran out of soy milk so I made almond milk but basically i just purreed almonds with milk, I didn't strain anything. Worked fine!

PPK Blog Chai Spice Snickerdoodles in bar cookie form. Soooooo good. I really prefer them this way! And it was way faster.

I made some amazing Dark Rye Bread with Toasted Hazelnuts from Vegan Secret Supper. It's so good. I sliced it and froze it, and every morning I have two pieces, toasted with jam. Heaven!!!

So I'm doing a reeaaaaally low budget diet this month and trying my best just to eat out of the pantry...so I decided to make peanut butter cookies with the recipe on the jar, with just peanut butter, sugar and a flax egg.
Now, my sister is an omni, insanely picky and insanely hard to please. You would not believe the fantastic things I've made that she wouldn't even try. But THESE she's in love with. Go figure.

I've made those cookies countless times. Everyone always fawns over them. I really think its because of the high sugar content that they are so good! There's not messing around, it's basically sugar coated peanut butter!

I'm making the lemon bars from The Joy of Vegan Baking tomorrow. I've made them lots of times now, with variations, and so I'm making tropical ones. Coconut in the shortbread base, orange juice/zest and passionfruit instead of lemon, with shopped pineapple mixed in. They're really moist and delicious.

Carrot cupcakes with vegan cream cheese lemon icing from vctotw. Also, and I don't know if this counts as baking, but I made the veganized version of peanut butter squares from Nigella Lawson's htbadg  Not my pic, got this from the nigella website, but this is what they looked like and they are good...sweet, but good.
