I accidentally made the big crunchy peanut butter oatmeal cookies this evening. Bloody delicious. Last time I made them they weren't crunchy, more chewy. This time they were good and crunchy, perfect for dunking in tea.

Your post inspired me to make a batch of these today -- I bookmark OSG baking recipes all the time but tend to forget about them. I used applesauce in place of the bananas, and I subbed 1/3 cup of agave for the 1/2 cup of maple syrup. For funsies, I put in some pomegranate Craisins and walnuts. I haven't ever bought sunflower seed butter, but now I want to try it -- I used almond butter in the batter.

Gotta love these infinitely customizable recipes!

banana bread. i tried making it a little healthier by subbing out some butter and omitting some sugar. it ended up more on the bread-y side than the sweet, goey, cake-bread side. ah well.

I've got these in the oven now. I came across them googling for what to do with extra granola and they just happened to be practically vegan already.

Cool! The only thing I would change next time is add more spices and probably extra raisins or other dried fruit. They are a little plain as is.

poopiebitch....that focaccia bread looks amazing. I love making my own focaccia but it never comes out looking as great as yours.


Today I made Choloe's ( from her recent book) Mixed Berry Cake for Easter. Its a vanilla white cake with coconut whipped cream. I didn't have all the berries she indicated in the recipe so I just mixed up a small fruit salad with mandarin oranges, banana, and strawberries. It was great! Very simple cake to throw together. The coconut whipped cream was soooooo good. I think that will now be used frequently in the house. A few pics....sorry, from a phone and not that great, but we could not wait to find another camera to tuck into the cake.

I put the fruit on after we sliced it. I thought it might add too much moisture so just added afterwards.

I made a big Easter braid bread for breakfast yesterday. It was so pretty...why do I never take pictures? For lunch with family I made tempeh pastry puffs from vegan brunch. So good! I made the filling the night before and assembled and baked them at my sister's. My son turns 13 this week (yikes!) So we did birthday stuff for him since we were with family. I made a three layer carrot cake with cream cheese icing. I tripled the carrot cake recipe from vctoycj, subbing crushed pineapple for the raisins. Also so good!

I made the limoncello bundt cake from Betty Goes Vegan. The cake was lightly lemony, super moist and had a really fine crumb... definitely a pudding-cake type texture. It also had a beautiful sheen to it when it came out of the bundt pan. My only issue was with the glaze, since it's heated on the stove, it's pretty thin and if you were to just pour it over the cake, it pretty much just runs off of the side and your cake will just be sitting in a huge pool of glaze. The other option is to just not use all of it, but in that case you'd probably need less than half the amount that the recipe calls for. I chose option C, which was to continue basting the glaze over the cake as the glaze started to cool, which made my cake look gloopy, but at least there was plenty of yummy glaze that stuck to the cake! I'd make it again, but probably just use the method I use with other similar glazes, which is to just melt the butter and then pour it into the bowl with the sugar and other liquids... that way it's a bit more viscous from the get go.

Baked a batch of oatmeal raisin cookies and a loaf of whole wheat bread yesterday. OH took the cookies in to work, and they vanished in record time. He also found out that one of his colleagues is slooowly transitioning, which made me very happy - refusing omni homebaked goodies always makes me sad.
Most of the loaf was turned into garlic toast to go with lasagne last night as we had friends over. Very nommy.

Found some blue poppy seeds at the back of the press and really want to make lemon poppy seed cake now....

Does anyone have a favorite recipe for apple quick bread/loaf cake? Preferably one that calls for grated apples. I have 3 super mealy granny smith apples that I'd like to use in something where they will basically dissolve and not be noticeable.
