i made coffee chip mini muffins from vegan brunch and veganized this Paula Deen recipe for PB&J muffins to take to work for nurses appreciation week.
This was surprisingly not too unhealthy to begin with: http://www.foodnetwork.com/recipes/paul ... index.html
I replaced half the flour with whole wheat pastry, increased the sugar to 1/2 cup (since i was using unsweetened PB), added a teaspoon of vinegar to the milk, and used oil instead of butter and only used 1.5 tablespoons baking powder. they came out really good! Oh and obviously i didn't use honey roasted peanuts. I used crunchy pb, so I omitted the extra peanuts.

Boyfriend's team at work is having a soup lunch tomorrow so I'm baking a loaf of crusty bread and some pesto rolls for him to take along. Of course, I have enough bread dough left for a loaf to keep at home, too-priorities!

I made the chocolate yogurt bundt cake from the PPK blog but ran out of flour, so used half wheat flour, half Bob's Red Mill gluten free mix. Hopefully it will turn out...

It turned out super awesome! Super moist and delicious, especially with some fresh strawberries. Might be my new favourite cake!

Stove top 'baking' counts right? i made the maple hemp clusters from the new VT this month. They did not harden up but I put them in the fridge so we will see. I do not want them for the salad but for yogurt and trail mix add ins!

Right now i am waiting for the cake part of my Sticky Fingers Little Devils to cool so i can complete them.
Earlier this week i made garlic-rosemary sandwich rolls from Vegan Diner for a mother's day picnic. My mom was surprised/impressed that i made the bread myself (which is silly because she knows i enjoy few things more than cooking EVERYTHING) but really enjoyed them. I used leftover bread for hammy tofu cheese sandwiches, like the ones i used to get from Panera ages ago but with salty smokey peppery tofu>ham.
I also made chocolate cupcakes with strawberry goo filling and ganache on top.

i made a batch of the ultimate brownies from the 100 Best Vegan Baking Recipes tonight. i ate one as soon as the pan was cool enough to touch and thought it was too cakey and not really chocolatey enough, but i just cut another one, and they're better than i thought at first. the texture just isn't quite there for me. maybe my memory of non-vegan brownies is falsely idealistic. i couldn't even tell you what i'm looking for, really--just that everything i've ever tried has been not quite right. i haven't tried the VCIYCJ recipe yet. i guess they're my only hope.

I came in here to say I made brownies for my bf's birthday a couple days ago, after he said he wanted crinkle top brownies.

acr, I'm not sure if this is the type of brownie you're looking for, but these are my favorite. I don't like em cakey either.

Acr, try the deluxe cocoa brownies from vciycj. They are a little tricky cause they can be a bit dry if you bake for too long, but the right amount of baking and I think they're perfect. I made them for the bakesale. Did you happen to try them?

i didn't try them, but i remember talking about them. for some reason i was weirdly anti-chocolate that day. i'm out of sugar now (*GASP*), but i'll try making the VCIYCJ recipe soon. and i'm starting to think that this batch i just made might have been closer to what i wanted with a little more cooking and a little less flax goop. i'll get it right one way or another.

I made biscuits and scones while my mom was here last week. And chocolate chip cookies. She was blown away by how good everything was even though it was vegan!

I made the Vegan Brunch scones for the first time - just the basic recipe - and they were so delicious. I want to make them in round shapes next time and use them for a strawberry shortcake kind of dessert with whipped cream. That's something I really missed from pre-gan days.

The biscuits are my go-to recipe - the one from Vegan Diner.

Baked today Cinnamon Coffee Cake from Joy of Vegan Baking. It's my first recipe tried from the book and came out wonderful. I added 1/2 cup white spelt flour+1/2 plain flour (instead of 1 cup plain flour) and it's successful. House smelled divine!
